Eating well and cook little: Recipe of the week for our students

The classes have already started and we are gradually adapting to the routine of schedules, transportation ... is also time to start organizing life on our student flat, and that includes cooking occasionally . Begin the Autumn eating well without great complications in the kitchen. There goes our recipe!

This time we will cook eggplant stuffed with cheese. Look in the fridge of your Student accommodation if you have any of the following ingredients before you go shopping.


4 eggplants

2 onions

150 g. fresh cheese.

150 g. Emmental.

150 g. Manchego cheese little cured.

1 egg.

Olive oil.




First of all, set the oven to heat while you prepare the ingredients.

Cut the eggplants lengthwise in half, add a little oil and salt and put them in the oven to soften, about 20 minutes.

Remove the eggplant pulp leaving only the skin. You can help yourself with a spoon.

Fry the chopped onion  in a pan over low heat. Cut the cheese into cubes and put them in a saucepan melt.

Add the chopped eggplant pulp, a little salt and pepper and poached onion, and make a mix which will fill the eggplants.

Finally, beat the egg and put it over the eggplant. Baked 10 minutes and... ready!!!
